Ingredients:

  • ~1 kg chicken thighs
  • 1 medium onion
  • 1 tsp garlic powder
  • 1 tbsp ground coriander
  • 1 tsp oregano leaves
  • 1 tsp ground cumin
  • 2 tbsp lime juice
  • 2 tbsp soy sauce

Directions:

  1. finely dice the onions and add them to the instant pot
  2. add the chicken to the pot
  3. mix the rest of the ingredients and pour over the chicken and stir to evenly distribute
  4. seal the pot and cook on high pressure for 10 minutes, then quick release
  5. use kitchen scissors to cut the chicken into smallish pieces
  6. bring to a boil and add some corn starch and water if it’s too thin.

Note: In Dec 2021 I made this and it was taking a while to generate enough steam for the instant pot to seal, so I added another 4 tbsp of water. It sealed, but ended up pretty watery. either try it without next time, or get it going early enough that you can simmer it for a while to get rid of some of the liquid…
