Ingredients:
- ~1 kg chicken thighs
- 1 medium onion
- 1 tsp garlic powder
- 1 tbsp ground coriander
- 1 tsp oregano leaves
- 1 tsp ground cumin
- 2 tbsp lime juice
- 2 tbsp soy sauce
Directions:
- finely dice the onions and add them to the instant pot
- add the chicken to the pot
- mix the rest of the ingredients and pour over the chicken and stir to evenly distribute
- seal the pot and cook on high pressure for 10 minutes, then quick release
- use kitchen scissors to cut the chicken into smallish pieces
- bring to a boil and add some corn starch and water if it’s too thin.
Note: In Dec 2021 I made this and it was taking a while to generate enough steam for the instant pot to seal, so I added another 4 tbsp of water. It sealed, but ended up pretty watery. either try it without next time, or get it going early enough that you can simmer it for a while to get rid of some of the liquid…
