Based on the recipe from the rebar cook book

Ingredients:

  • ~500g rice noodles
  • ~500g protein (tofu, chicken, pork, etc)
  • 2-3 large carrots, cut up into chunks
  • 2 tbsp coconut oil
  • 4 cloves garlic, crushed
  • juice of 1 lice
  • cilantro and green onion, chopped
  • 1 heaping tsp ground cumin
  • 250g snow peas
  • 250g bean sprouts
  • optional - 120ml / 1/2 cup cashews - crushed

Sauce:

  • 120ml / 1/2 cup soy sauce
  • 120ml - 1/2 cup water
  • 85ml - 1/3 cup honey
  • 60ml - 1/4 cup pesto

Instructions

  • prepare the noodles
  • cut the protein into cubes and add it to a wok with the oil and cumin, and fry until golden brown. set aside
  • add the garlic (with more oil if needed), when the garlic starts to brown, add the carrots, cook on medium-high until the carrots start to soften
  • while the carrots are cooking, whisk together the sauce ingredients (soy sauce, water, honey, pesto)
  • when carrots are cooked, add noodles and 3/4 of the sauce and stir until well mixed. add protein
  • whisk the sauce again, add remaining sauce and lime juice and stir until well mixed
  • add the bean sprouts and snow peas and mix well
  • sprinkle some of the cilantro/green onions on top (and the cashews if using them), and serve the rest with the meal
