  • 17g Psyllium husk powder (or 20g whole husks)
  • 360g warm water
  • 75g plain or Greek yoghurt
  • 25g vegetable oil
  • 235g millet flour
  • 130g starch (tapioca, corn, potato, etc)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1-1/2 tsp baking powder
  1. Using hand mixer, beat together water, yoghurt, and vegetable oil
  2. While beating, add psyllium mixture to liquid. Continue beating until a gel forms.
  3. Whisk together flour, starch, sugar, salt, and baking powder
  4. Form well in dry ingredients and add gel glop. Knead to a uniform dough
  5. Form a ball on a pastry stone or floured cutting board. Divide into eights.
  6. Roll out to about 3mm thickness and 15-18mm diameter.
  7. Freeze between sheets of parchment if desired.
  8. Cook on fairly hot, oiled cast iron griddle (at or just below smoke point). About 1-2 minutes each side or until browned spots develop.
  9. Butter to taste. Add cilantro and/or garlic if desired/available.
