Ingredients:

  • 8 Oz Button Mushroom chopped each into 4 parts.
  • 1 Cup Frozen Green Peas
  • 1 Medium Chopped Onion
  • 1 Tbsp Ginger Garlic Paste
  • 1 Tbsp Tomato Puree
  • 2 Tsp Coriander Powder
  • 1 Tsp Turmeric Powder
  • 4 Tbsp Oil
  • 1 Tsp Cumin Seeds
  • 1 Small two inch cinnamon stick
  • 2 Star Anise
  • 1 Tsp Garam Masala Powder
  • 2 Small bayleaf
  • 1 can coconut milk
  • 1 tsp salt
  • 1 kg chicken thighs

Directions:

  1. set instant pot to saute
  2. add 2 tbsp onions and saute until transparent
  3. add rest of oil, and cumin, bay, cinnamon stick and star anise
  4. add ginger/garlic paste
  5. add chicken and rest of ingredients, except peas and half the garam masala
  6. set instant pot to 10 minutes at high pressure
  7. release pressure when done, cut up chicken.
  8. mix 1/4 tsp of xanthan gum in with 1 cup of liquid if too thin, and add back to the pot and mix in
  9. add in peas and rest of garam masala
  10. search with rice
