The marinade:
1/3 cup pure maple syrup
1/4 cup grainy Dijon mustard
1 tbsp reduced-sodium soy sauce (use Tamari soy sauce for gluten-free)
1 tbsp curry powder
2 tsp minced garlic
1/2 tsp each ground cumin, chili powder and freshly ground black pepper
1/4 tsp each sea salt and cayenne pepper
Instructions:
Whisk together all marinade ingredients
pour over 2 to 3 lbs chicken drumsticks or thighs and let 'em soak for at least a couple hours.
Preheat oven to 375F.
Arrange chicken pieces in a single layer on a rimmed baking sheet. (Line with foil or parchment for easier cleanup.)
Drizzle with extra marinade.
Bake for 40 to 45 minutes. YUM!
