Recipes/Lasagna
Ingredients
1 package fresh lasagna noodles
Extra-virgin olive oil
500g ground beef
500g Italian sausage
800ml prepared pasta sauce (Tomato with basil and garlic, or something similar)
1kg ricotta cheese, (2 containers)
2 eggs, lightly beaten
125ml grated Parmesan
750 mozzarella cheese, shredded
Instructions:
0. Preheat oven to 175C (350F)
1. Remove sausage meat from skins. In a large skillet, with some olive oil in it, brown the beef and sausage meat. Add the tomato sauce and stir for a minute or so before turning off the heat.
2. In a mixing bowl, combine the ricotta and parmesan and then stir in the eggs
3. coat the bottom of a 13x9in pan with oil.
4. put a layer of noodles on the bottom
5. spread roughly half of the ricotta mixture on the noodles
6. spread slightly less than half of the meat mixture over the ricotta
7. sprinkle about 1/3 of the mozza over the meat
8. repeat steps 4-7 for a second layer, being sure to reserve enough of the sauce from the meat mixture to spread a very thin layer of sauce (with minimal meat) on top
9. add final layer of noodles, spread a very thin layer of sauce over it, and top with mozza (and some extra parm if you like
10. Bake for 35 minutes, let rest for at least 5 minutes before cutting
