Ingredients:

  • Egg Yolks – 3 eggs (1 yolk)
  • Lemon Juice – 1 tablespoon (1 tsp)
  • Dijon – 1 teaspoon (generous 1/4 tsp)
  • Salt – 1/4 teaspoon (pinch)
  • Cayenne Pepper – just a pinch
  • Butter- 1/2 cup (114g) of melted butter (1/6 cup - 38g of melted butter)

Directions:

  1. put all ingredients except the butter in a bowl with a bowl with a narrow bottom and use an immersion blender to mix - it will most likely be barely enough to blend.
  2. slowly pour the melted butter in and pulse the immersion blender to mix the sauce
