Ingredients

  • 75g Namaste GF flour (plus more for dusting hands and cutting boards
  • 4g xantham gum
  • 47g hot (60C) water
  • pinch of salt

Directions

  1. Mix ingredients together and kneed into a dough
  2. pinch off 15-16g chunks, and roll out into a rough circle large enough to cover the top of a large water glass, and then use the glass to cut out a circle. re-use any remaining dough in the next wrapper
  3. add a tiny bit of water if the dough gets to dry to work.
  4. once the wrappers are made fill with 1 tsp of filling (carmelized ground turkey works well)
  5. run a wet finger around roughly half of the inside edge, and fold over and press firmly together to seal.
  6. boil 6-8 at a time in a large pot of water for 3-4 minutes.
  7. serve with peanut sauce or other dipping sauces.
