Ingredients:
- 500g black currants
- 250g sugar or allulose
- 30g rice wine vinegar
- zest of 1 lemon
- 5ml vanilla extract
- pinch of salt
Directions:
- bring the salt, sweetener and vinegar to a simmer
- add the currants and let warm up
- pulse with hand blender to break up the currants
- bring to a boil, and cook for 5-10 minutes until it is think, stirring regularly
- turn off the heat and add the zest and vanilla extract.
- put in a container and keep in the fridge.
