Ingredients:

  • 500g black currants
  • 250g sugar or allulose
  • 30g rice wine vinegar
  • zest of 1 lemon
  • 5ml vanilla extract
  • pinch of salt

Directions:

  • bring the salt, sweetener and vinegar to a simmer
  • add the currants and let warm up
  • pulse with hand blender to break up the currants
  • bring to a boil, and cook for 5-10 minutes until it is think, stirring regularly
  • turn off the heat and add the zest and vanilla extract.
  • put in a container and keep in the fridge.
