Based on the recipe on page 58 of baked to perfection

  • 75g icing sugar

  • 95g whole cream (would be better with less)

  • 125g cream cheese

  • 1/2 tsp vanilla

  • 1/4 tsp salt

  • Whip cream in medium bowl

  • Whip cream cheese and sugar until smooth, then add to whipped cream and mix until incorporated

  • Add vanilla and salt and mix until incorporated
