Ingredients

  • 1 1/4 cup (250g) margarine melted
  • 1 cup ( ??g) light brown sugar swerve (or 1 cup granulated swerve plus 2 tbsp / 30g molasses) (orig recipe called for 2 cups)
  • 2 eggs
  • 3/4 cup / 180g water
  • 1 tablespoon vanilla
  • 115g psyllium husk powder
  • 160g coconut flour
  • 1/4 teaspoon salt
  • 1 cup (150g) roasted and salted cashews chopped
  • 1 cup (75g) unsweetened coconut (I use the big chunks from Lufa, coasrse chopped) plus another 1/2 cup (38g) for topping
  • 1 cup 130g dark chocolate chips

half batch:

  • 1/2 cup (125g) margarine melted
  • scant 1/2 cup (110g) hot water
  • 1/2 cup ( 100g) swerve (granulated)
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp caramel extract
  • 57g psyllium husk powder
  • 80g coconut flour
  • 1/4 teaspoon salt
  • 1/2 cup (75g) roasted and salted cashews chopped
  • 1/2 cup (38g) unsweetened coconut (I use the big chunks from Lufa, coasrse chopped)
  • 3/4 cup 100g unsweetened chocolate chips

Directions:

  1. Preheat oven to 350F
  2. mix the psyllium husk, coconut flour, salt, cashews, coconut, and chocolate chips in one bowl
  3. melt the margarine in another bowl, then beat the egg into it, then mix in the hot water, swerve, and extracts until well combined
  4. add the wet ingredients into the dry and mix well - you need to work quickly here, since the psyilium will active quickly once wet.
  5. spread into a greased 8x8 pan
  6. bake for 28m or until slightly browned
