Ingredients
- 1 1/4 cup (250g) margarine melted
- 1 cup ( ??g) light brown sugar swerve (or 1 cup granulated swerve plus 2 tbsp / 30g molasses) (orig recipe called for 2 cups)
- 2 eggs
- 3/4 cup / 180g water
- 1 tablespoon vanilla
- 115g psyllium husk powder
- 160g coconut flour
- 1/4 teaspoon salt
- 1 cup (150g) roasted and salted cashews chopped
- 1 cup (75g) unsweetened coconut (I use the big chunks from Lufa, coasrse chopped) plus another 1/2 cup (38g) for topping
- 1 cup 130g dark chocolate chips
half batch:
- 1/2 cup (125g) margarine melted
- scant 1/2 cup (110g) hot water
- 1/2 cup ( 100g) swerve (granulated)
- 1 egg
- 1 tsp vanilla
- 1 tsp caramel extract
- 57g psyllium husk powder
- 80g coconut flour
- 1/4 teaspoon salt
- 1/2 cup (75g) roasted and salted cashews chopped
- 1/2 cup (38g) unsweetened coconut (I use the big chunks from Lufa, coasrse chopped)
- 3/4 cup 100g unsweetened chocolate chips
Directions:
- Preheat oven to 350F
- mix the psyllium husk, coconut flour, salt, cashews, coconut, and chocolate chips in one bowl
- melt the margarine in another bowl, then beat the egg into it, then mix in the hot water, swerve, and extracts until well combined
- add the wet ingredients into the dry and mix well - you need to work quickly here, since the psyilium will active quickly once wet.
- spread into a greased 8x8 pan
- bake for 28m or until slightly browned
