Ingredients:

  • 168 g / 1 1/2 cup Almond Flour
  • 90 g / 1/2 cup Keto Chocolate Chips
  • 113.5 g 1/2 cup butter, melted
  • 1 large Egg
  • 100 g / 1/2 cup Low Carb Sugar Substitute (brown sugar, or add a bit of molasses)
  • 15 ml / 1 tbsp beef gelatin powder
  • 5 ml / 1 tsp Baking powder
  • 5 ml / 1tsp vanilla extract

(For crispy cookies, skip the egg, and bake at 325 for 18 minutes) (If using allulose, bake at 300F for 13 minutes)

Instructions:

  1. Preheat your oven to 350F / 175C and line a large baking sheet with parchment paper.
  2. Combine the almond flour, beef gelatin, sweetener and baking powder in a small bowl and set aside.
  3. In a large bowl combine the melted butter, egg, and vanilla extract using a whisk. In two batches add the dry ingredients to the wet and combine until uniform.
  4. Fold in the chocolate chips. Using a cookie scooper or spoon scoop out 16-20 cookies onto your baking sheets, depending on your cookie size preference!
  5. Bake the cookies at 350F / 175C for 15 minutes or until golden brown on the top. Allow to cool for at least 20 minutes prior to consuming! Enjoy!

Alternative instructions for ‘caramel’ cookies

  1. Preheat oven to 300F / 150C and line a large baking sheet with parchement paper
  2. Put the allulose in a medium pot, over medium/high heat, and stir it until it reaches ‘soft-ball’ caramel - i.e. dripping a drop in cold water gives a soft ball
  3. take the caramel off the heat, add the butter (and optionally a tbsp or two of cream to help it emulsify), and stir well. Let the mixture cool until it’s below 50C / 120F - either in the air, or by putting the pot in a cold-water bath.
  4. mix the almond flour, beef gelatin, and baking powder in a large bowl
  5. Once the caramel mix is cool enough, add the vanilla to it, and stir well (note: it doesn’t need to be fully emulsified here)
  6. add the caramel mix to the flour mixture and stir well
  7. fold in the chocolate chips and scoop onto the baking sheet.
  8. bake for 13-15 minutes (13g cookies took 13 minutes for me)
