Recipes/Desserts/Caramel Chocolate GF Brownies

Created by blending the chocolate caramel cheesecake recipe with https://tasty.co/recipe/the-best-ever-vegan-brownies

chocolate-caramel mix:

1 cup sugar + 2 tbsp ( 200g)
1/2 cup DF margarine
8 oz (~225 g) dark chocolate - chopped fairly coarsely
2 teaspoons  vanilla extract

put the sugar in a dry sauce pan over medium heat, and cook until it melts, stirring regularly - it will seem a bit wrong at first, but just keep stirring - once it is hot enough the sugar will melt and you'll get a liquid. Keep cooking until it turns golden brown and add the margarine - it will bubble and froth a lot, but keep stirring. You may end up with a solid mass of caramel in the middle of the liquid - if so, just keep stirring until it's all dissolved. Once it is dissolved, stir in the chocolate until it is melted, and then add the vanilla.

Brownies:

 2 eggs
 ¾ cup  all-purpose flour, plus 2 tablespoons (95 g)
 ¼ cup  cocoa powder (30 g)
 1 teaspoon  baking powder
 1 teaspoon  salt

Instructions:

 Pre-heat oven to 350F / 180C
 Line an 8" square pan with parchement (or apply cake release)
 Sift together the dry ingredients and then add the eggs and the chocolate-caramel mix and stir well
 Pour batter into pan and smooth top
 Bake for 30-35 minutes until a toothpick in the center comes out clean
