Based on Warren’s Grandma Baird’s recipe

Ingredients:

  • 110g / 1/2 cup butter
  • 205g / 1 cup Allulose sweetener (265g if using pure allulose)
  • 2 eggs well beaten
  • 150g / 1-2 medium bananas, mashed
  • 200g / 2 cups almond flour or keto baking mix
  • 2 tsp baking power
  • 1 tsp soda
  • 1 tsp vanilla
  • 4 tbsp heavy cream
  • 1 tsp white vinegar
  • 1/4 tsp salt
  • 100g / 1/2 cup chocolate chips (optional)

Directions:

  1. preheat oven to 160C / 325F
  2. prepare a loaf pan with grease/cake release / parchement (I recommend parchement)
  3. put butter and allulose in a stand mixer (or use hand mixer in a bowl) and cream until fluffy
  4. add eggs and bananas and mix well
  5. add the flour, baking powder and soda together and mix well
  6. add the vanilla, cream, vinegar, salt and chocolate (if using), and mix well
  7. pour into prepared loaf pan 8 place in oven and bake for at least 1 hour 10 minutes

Note: March 29, 2024 I tried this and baked it at 350F for 1 hour, and it was too browned on the outside - almost burnt. Might be able to do 350 for a shorter time, but try 325 for slightly longer… start checking at an hour though, just in case. March 25, 2026: I tried this with Carbonaut baking mix at 325F for 45 minutes - it rose a lot, and a toothpick came out clean - but it collapsed a lot after taking it out and it seems pretty undercooked in the middle. the end pieces were pretty tasty though, and it wasn’t over-browned.
