Sauce:
Juice of 1 orange
Juice of 1/2 lemon
1/2 cup tamari sauce
2 tbsp sugar
Mix the sauce ingredients together over low heat until sugar melts
Fried Rice
300g pineapple (~ 1/2 pre-cored pineapple)
94g frozen peas (3/4 cup)
148g corn (1 cup)
1 medium carrot, diced
1 bunch broccoli (~310g)
400g chicken breast (2 small or 1 large breast) - cut into chunks
1 tbsp seasame oil
5 eggs
1 tbsp soy sauce
144g cashews - 1 cup
3/4 cup vegetable oil
2 cups basmati brown rice (prepared)
Assembly:
1. add 1.5 tbsp of sauce and 1tbsp sesame oil to chicken
2. mix the soy sauce into eggs and beat well
3. add 2 tbsp oil to the pan and heat
4. add cashews, cook until they start to brown (~1.5 minutes)
5. add carrots and broccoli, cook for 1m
6. add 1/4 cup oil and chicken, stir regularly for 1.5 minutes
7. add 1/4 cups, stir regularly for 1.5 minutes
8. add egg and stir until egg are scrambled - about 3 minutes
9. remove contents to separate container
10. add 2 tbsp oil, peas, corn and cook until warm - about 1 minute
11. add pineapple and cook for 2 minutes
12. remove to container
13. add 1/4 cup oil to pan and heat
14. add rice, fry for 5 minutes
15. add 3/4 cup sauce (should be all that is remaining), and mix well
16. return everything else to the pan and stir to heat through
