Recipes/Chicken Souvlaki

Ingredients:
- 1 kg chicken, cut into 2-3cm chunks (traditional is breast, I used thighs)
- ~8-10 cloves garlic (40g) minced
- 30ml / 2 tbsp dried oregano
- 5ml / 1 tsp dried rosemary
- 5ml / 1 tsp salt
- 60ml / 1/4 cup olive oil
- juice of 1 lemon
- 2 bay leaves
Directions:
- Mix the marinade ingredients in a bowl, the add the chicken and toss to coat. marinate in the fridge for at least 2 hours, or on the counter for 30 minutes
- Cook on a griddle until cooked through - 5-10 minutes total depending on how big the pieces are.
- serve with Tzatzki, and greek-ish salad.
