Ingredients:

  • 6 tablespoons / 55g psyllium husk powder
  • 3/4 cup / 75g coconut flour
  • 1.5 tsp / 7g baking soda (add more if your baking soda is old)
  • 1 tsp salt
  • 8 eggs
  • 1/2 cup / 115g coconut oil / butter / margarine - softened
  • 3/4 cup / 180g hot water

Directions:

  1. preheat over to 175C / 350F and grease a loaf-pan
  2. mix the dry ingredients - psyllium, coconut flour, baking soda, salt in one bowl, and the wet ingredients (eggs, fat, hot water) in another
  3. add the wet into the dry and stir quickly - the psyllium will activate quickly when wet
  4. transfer to the loaf pan and bake for at least 60, perhaps 70 - the crust should be dark and hard. Overcooking isn’t a big problem, but undercooking is
  5. let sit for 15 before removing from pan, and let cool completely before cutting.

Ingredients:

  • 2 cups / 275g almond flour
  • 1/4 cup / 37 g psyllium husk powder
  • 1/2 tsp xanthan gum
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/4 cup butter, melted
  • 1/2 c warm water

Directions:

  1. preheat oven to 177C / 350F, line a loaf pan with parchment
  2. in a large bowl, use a hand mixer at high speed to beat eggs until they double in volume
  3. in second bow whisk together almond flour, psyllium husk powder, baking powder, xanthan gum and salt
  4. mix the dry ingredients into the eggs, then add the butter and warm water
  5. transfer to a baking pan and smooth the top
  6. bake for 60-70 minutes until top is very crusty, and 10 minutes after a toothpick comes out clean
  7. cool completely then remove from the pan and slice.
