Ingredients - Sauce:

  • ½ cup butter(115 g)
  • 1 cup brown sugar(220 g) - or white sugar + some molasses
  • 1 teaspoon cinnamon
  • 3 bananas, sliced

Ingredients - Crepe:

  • 2 eggs
  • 200g milk (3/4 cup plus a splash)
  • 60g GF pancake (1/3 cup)

Instructions:

  1. beat the eggs in a medium bowl, then add the milk and pancake mix and stir well. let sit while making the crepe filling
  2. melt the butter in a large non-stick frying pan over medium heat, then add the sugar and cinnamon and mix well. cook until very bubbly
  3. add the banana slices to the caramel sauce and let cook for a minute or so, then pour the sauce into a bowl
  4. wipe the pan with a paper towel, then put in a small amount of butter
  5. stir the crepe mix again, and then pour 80 ml (1/3 cup) into the frying pan and swirl around until the entire frying pan is coated
  6. let sit until the under-side of the crepe starts to brown, then scoop
