Ingredients - Sauce:
- ½ cup butter(115 g)
- 1 cup brown sugar(220 g) - or white sugar + some molasses
- 1 teaspoon cinnamon
- 3 bananas, sliced
Ingredients - Crepe:
- 2 eggs
- 200g milk (3/4 cup plus a splash)
- 60g GF pancake (1/3 cup)
Instructions:
- beat the eggs in a medium bowl, then add the milk and pancake mix and stir well. let sit while making the crepe filling
- melt the butter in a large non-stick frying pan over medium heat, then add the sugar and cinnamon and mix well. cook until very bubbly
- add the banana slices to the caramel sauce and let cook for a minute or so, then pour the sauce into a bowl
- wipe the pan with a paper towel, then put in a small amount of butter
- stir the crepe mix again, and then pour 80 ml (1/3 cup) into the frying pan and swirl around until the entire frying pan is coated
- let sit until the under-side of the crepe starts to brown, then scoop
