Ingredients:

  • Sauce

  • 1 1/4 cups raw cashews (soaked)

  • 4 Tbsp nutritional yeast

  • 4 cloves garlic

  • 1/2 tsp sea salt

  • 2 Tbsp vegan parmesan cheese (plus more for serving)

  • 2 cups water

  • Turkey Sausage mix (see recipe for sausage risotto)

  • 500ml / 2 cups frozen peas or other frozen veggie

  • 250g (dry) GF pasta

Directions:

  1. Start water boiling for the pasta (and prepare the pasta to directions once the water is boiling)
  2. Prepare the turkey sausage mix in a different pan (Optional : add onions and/or mushrooms in the mix)
  3. put all of the sauce ingredients into a blender, and blend on high for 2 minutes (requires a powerful blender like a vitamix)
  4. once the turkey sausage mix is fully browned, add the sauce to it, and wait until it is simmering gently
  5. add the peas (or whatever veggie) and let sit for a few minutes so they heat up.
  6. when the pasta is finished and drained, either mix it into the sauce/turkey mix, or plate it, and pour the turkey sausage mix over it…
